So what crazy things have I been up to this week?...Let's start with my pancake FAIL. Some of you may have seen oninstagram that my lazyness when it came to my pancake making resulted in a well deserved, less-than-perfect result. Don't get me wrong, it tasted absolutely delicious, but it was nothing like what I had hoped it to come out like :P It was supposed to be a delicious chocolate stuffed massive banana pancake. I added one layer of banana, then a beautiful creamy 'chocolate' layer (healthy and clean of course) ...

...but when I added another layer of the pancake batter to seal in the chocolate........it all just kind of spread to the edges. Oh well, I'll work on it (or abandon the idea). Nonetheless, I topped it with some sweetened hot strawberries and chobani, so it was a delicious ugly huge healthy banana pancake with a creamy chocolate rim. ;) 

On a more exciting note, I got a great delivery in the mail today! When a little yellow bag arrived in the mailbox, I knew what it was straight away and couldn't help but get a little over excited.

The lovely lady that I purchased these items from had packaged them up so simply yet lovely and it built up even more suspense as I opened up what was inside. I think I may have take my peanut butter & jelly and pancake obsession to the next level with these....

They are absolutely adorable, the cutest key rings I have ever seen and hand crafted! I bought them of a very kind and talented lady over at Etsy with the store name Scrumptious Doodle  (you can find her online store here). Even the name of her online store is so adorable! She does heaps of other miniature food key rings, jewellery etc. so definitely go check her our, her customer service is superb! I will definitely buy from her again. 



Now getting back to my non-fake food, I'm so glad that you have all been enjoying my website and have found it easier to access my recipes! It's so nice to get back such positive feedback for my recipes. One particular recipe you you guys seem to be enjoying is my healthy cookie dough bites! (recipe here). I love checking back on my hashtag (#letmebehealthy) to see what you guys have made! (I have to look at the hashtag sometimes as instagram cuts off comments at times and I cannot see my mentions - it's so annoying!) So keep up the great work with making the recipes everyone, I absolutely love to see them & as long as you keep enjoying them, I'll keep making more!

Banana, Banana, Banana

If you've been watching my instagram, you know that I have kind of been going a little banana crazy with the recipes. I posted a pic of the healthy banana fudge that I put in the freezer and forgot about...



I'm definitely going to have to try and recreate that recipe because it was truly so yummy (plus fat free & no added sugar!). Then I continued with the banana trend with my banana cookie dough overnight oats.



Cinnamon vanilla overnight oats (basic recipe here) topped with my healthy banana cookie dough bites minus the choc chips (recipe here) and crushed walnuts in a jar? Breakfast heaven on the go. And then, JUST BECAUSE I had so many overripe bananas left (I think my mum has some sort of obsession with buying them?), I went and made a delicious chocolate swirl banana coconut snack bread yesterday. 

Yum, yum and double yum! Just over 50 calories per slice and completely clean (as well as dairy and gluten free if you sub the milk). You can find the recipe here. If my mum keeps going like she is, you can expect even more banana recipes ;). Enjoy!
